This simple salad is a twist on a classic Fattoush Salad. I eliminate the toasted pita wedges but if you would like to add them, make sure they are very crisp. You can also add toasted Ezikiel wraps or crispy Corn tortillas for a gluten free option.
3 – 4 firm Tomatoes cut into wedges.
2 red Onions, sliced thin
1/4 bunch fresh Coriander, chopped
1/4 bunch fresh Mint, chopped
1/4 bunch fresh Parsley, chopped
2 T Lemon juice
3 cloves Garlic, crushed
1/2 C Olive Oil
Salt and freshly ground Pepper
Putting it all together:
Toss the Tomatoes, Onions, and fresh herbs with the Olive Oil and Lemon juice and Garlic. Add the Salt and Pepper to taste.
