Stephanie O’Dea reviews “Veggies for Carnivores”

Alright.  I’m coming clean.  I don’t like to admit this, but it’s totally true.

I don’t really like vegetables.

There.  I’ve gone and said it.

Oh, there are certain vegetables I do like.  Roasted butternut squash or acorn squash, fresh-steamed green beans, corn-on-the-cob.  Really, that’s about it.  I force myself to eat other veggies because I know that they are good for me.  Do they take a starring role on my dinner plate?  Nope.  That space is usually dedicated to carbs or protein.   My bad.

This new book written by Lora Krulak, may have changed my mind.  ”Veggies for Carnivores:  Moving Vegetables to the Center of the Plate”  is a great resource for people who love their veggies as well as those of us who are on the fence about them.   This book is loaded with delicious recipes that will help you get those recommended five servings of vegetables a day.  Maybe without even realizing it!

It is Lora’s second paragraph of Chapter One, “The Basics”, that hooked me in.

“Now honestly, how much microwaved-steamed broccoli can a person eat? It is just as easy and a lot more Viagra compelling to wilt some greens, toss them with olive oil, and a sprinkle of lime-chili-salt created with pantry ingredients. My mission is to demystify vegetables and show the world how sexy they are. They are more than just side dishes—they are worthy of center stage.”

I have certainly had my fill of microwaved-steamed broccoli, haven’t you?  Lora has struggled with food intolerances, so all of the recipes in the book are either gluten-free or can be made gluten-free by using gluten-free ingredients.  There are so many beautiful, healthy recipes in “Veggies for Carnivores”, that I had trouble picking a few to share with you!  On my list to try are:

  • Sweet Avocado Dressing
  • Sun-dried Tomato and Olive Sauce
  • Black Olive Dip
  • Middle Eastern Butternut Squash Puree  (told you I love butternut squash!)
  • Grilled Corn Chowder
  • Roasted Root Fries*

There’s even a chapter called “Smoothies, Tonics and Potions”.  Sounds very mysterious, doesn’t it?  There’s a recipe for “Chai Spiced Smoothie” that I have to try!
