1 Sometimes – I take that back – most of the time, the simplest ideas are the best ideas.

A few years ago I was at a blogging conference and met a woman named Melissa who truly touched my heart. This lady had it all going on. She is beautiful, quick, grounded, a loving mother of two and when she spoke of her husband, she had a twinkle in her eye.

I don’t toss around the word “grounded” all that often, especially when describing women in the food business. But Melissa is different. She is the founder and creator of the company and concept, TheFresh20.coma menu planning service and now cookbook that uses only twenty seasonal ingredients per week to cook five weeknight dinners. That’s it. Simple and brilliant. Her idea sprouted from her honest desire to feed her family real, whole food.

Just like her menu planning service, the book is broken down into easily digestible chapters. Melissa clearly lays out every recipe, ingredient and pantry item, so even the most novice cook feels like a pro. She also holds your hand and helps you to start from the beginning by explaining why having a well stocked pantry makes all the difference, and she makes sure that you have the correct equipment. She is a woman after my own heart as this is exactly how I work with my own clients – I start with their kitchens because true heath begins there.

Melissa stresses organics whenever possible, and teaches you how to grocery shop. But I think the most valuable lesson in both The Fresh 20 Cookbook and TheFresh20.com is how she teaches the art of shopping for the week, using all of your ingredients and wasting nothing. The book is an educational tool as well as a cookbook.

Polenta Pan Pizza

This recipe is brilliant! Gluten free, flexible and beyond scrumptious. This has already become a brunch (my favorite meal) staple in our home, as it’s perfect with eggs on top!

Ingredients:

Coconut oil for the pan

3 C low sodium veggie broth

½ tsp Celtic Sea Salt

¼ tsp black pepper

1 tsp dried oregano

1 C quick cooking polenta or cornmeal, medium grain

1 pound heirloom tomatoes, cored and sliced

2 tsp herbs de Provence

6 oz. buffalo mozzarella or goat cheese cut into thin circles

Large handful fresh basil leaves, torn

Large handful fresh mushrooms, varied types

 

Process: 

1)     Lightly oil a 13×18 inch half sheet pan

2)     Bring the broth to a boil in a large saucepan. Add the salt, pepper, and oregano, reduce the heat to a simmer and whisk in the polenta. Cook, stirring consistently for about 5 minutes, until the polenta starts to thicken.

3)     Pour the polenta onto the half sheet pan.

4)     Prepare an outdoor grill for indirect grilling, (OR set the oven at 375 and heat the pan in the oven for 12 minutes)

5)     In a medium bowl, combine the tomatoes and Herbes de Provence.

6)     Sprinkle or scatter the mozzarella over the polenta in an even layer. Top with a layer of tomatoes and follow with the basil leaves.

7)     Set the pan on the cooler part of the grill, close the lid and grill for 10 minutes, or until the cheese is melted and the edges of the polenta are starting to brown.
