I truly believe that everyone can cook, but I often forget that everyone doesn’t.
It’s my theory that if you know how to cook one thing, you can cook almost anything. I’m sticking to it. Just try and push me off my soap-box.
Spices and spice mixes are an easy seg-way to making food taste great. If you have a good spice mix, you can turn to it for a multitude of simple “no brainer” recipes and come out looking like a champ.
Last week I had a few friends over for a bar-b-cue and made hummus. A friend commented on how pretty my hummus looked and how delicious it was. I used one of my go-to spice mixes called Zaater, a traditional middle eastern spice combination. Zaater is filled with super healing herbs and spices like sumac which has a pungent-lemony-sour flavor, thyme which is packed with iron and vitamin C and sesame seeds which is high in calcium and iron. Health benefits aside – this mixture elevates a common party dish like hummus to pro-chef heights. So when I say you come out looking like a champ-
I mean what I say.
Here’s what else you can do with a Zaatar spice mix to make you look like and feel like a super-star chef:
- Sprinkle on avocado or avocado toast
- Sprinkle on top of soup (excellent on lentil soup)
- Sprinkle on top of an omelet or eggs
- Mix with olive oil and spread on bread and bake
- Toss in with sauteed potatoes
- Sprinkle on top of your salad
- Season a fish with it
- Roll goat cheese in it
- Sprinkle popcorn with it.
Zaatar Spice Mix
2 Tablespoons sesame seeds, toasted
2 Tablespoons dried thyme
2 Tablespoons dried sumac (can use lemon pepper if you absolutely can’t find sumac)
½ tsp good salt
1 Tbs dried oregano
Mix the spices together and give them a quick whirl in a coffee grinder or mini prep food processor. Keep in an airtight jar.
