I learned the difference between being a Chocolatier and a Chocolate maker when I completed my Chocolate degree. A Chocolatier uses someone else’s blend to create molds and beautiful Chocolates, but a Chocolate Maker starts from scratch.
I begin with the bean and go from there. My Chocolate contains no refined Sugar, no Dairy, and no Gluten. . . . It is as pure as pure can be and it is spectacular. I have one slight problem with it though! I have to either sell it quickly or give it away, because I have been known to eat an entire batch!
I have learned many of my secrets from my dear friend, co-conspirator and genius Chocolate Maker Suki Zoe. She inspired and encouraged me to go off on a tangent of Spices that I had never dreamed possible with Chocolate. Now, there is no limit.
